Spelt Loaf
Here's a weekly recipe for our beloved customers: artisan sourdough spelt loaf, made from scratch using ancient grain flour, water, and salt. We are grateful for our loyal customers and are excited to share this delicious creation with you. Enjoy the process of baking and savor the unique flavors of this wholesome bread! Happy baking!
500 grams spelt flour
8 grams salt
50 grams starter
360 grams water

1. Combine dry ingredients and make a well in the center.
2. Pour water into the well add starter and mix, then combine all the ingredients.
3. Let dough rest about 45 minutes.
4. Knead dough for a few minutes.
5. Bulk fermentation. Turn the dough a few times.
6. Shape the dough.
7. Let rest a few more hours or refrigerate overnight.
8. Bake at 425 degrees F 30 minutes covered in dutch oven and another 15 uncovered.
